Baked Hash Browns

8 frozen hash browns patties
1 teaspoon salt
1/2 teaspoon garlic powder
1 cup whipping cream
1 cup shredded cheddar cheese


Place patties in a greased 9x13 pan. Sprinkle with salt and garlic powder. Pour cream over patties. Bake, uncovered, at 350 degrees for 50 minutes. Sprinkle with cheese, and bake until cheese melts.

Berry Syrup / Sauce


2 cups fresh berries
1/2 cup sugar
1/2 cup water
2 tsp cornstarch
1 tablespoon cold water
1/2 teaspoon vanilla
1/2 teaspoon lemon juice


Combine first 3 ingredients in a medium saucepan. Over medium high heat bring mixture to a boil, reduce heat to medium, cook for 5 minutes. Remove from heat, blend; return to pan. In small bowl combine corn starch and cold water add to sauce. Bring mixture to a boil for 1 minute or until desired thickness. Remove from heat, add vanilla and lemon juice; stir. Cool completely.

Biscuits and Gravy

1 pound breakfast sausage
2 tablespoons flour
2 cups milk
salt, pepper, cayenne pepper,
 to taste


Brown sausage and drain all but 2 tablespoons of grease. Add flour, cook for 1 minute. Heat milk until almost boiling. Stir in sausage, salt and peppers (the more pepper the better). Cook over medium heat until desired thickness. Serve over fresh biscuits.

Breakfast Pizza

               1 tube Crescent Rolls
               1 pound pork sausage or bacon, browned and drained
               1 cup hashed brown potatoes, frozen
               1 cup shredded cheddar cheese
               3 egg
               1/4 cup milk
               1/4 teaspoon pepper
               1/4 cup grated Parmesan cheese


               Preheat oven to 375 degrees. Unroll crescent
               rolls and place 
on a greased 12 inch pizza pan
               points in the middle. Press seams 
together and
               up sides of pan to form a crust. Sprinkle over crust;

               sausage, hash browns and cheddar cheese. In a
               bowl combine eggs, 
milk and pepper; pour over
               pizza. Sprinkle with Parmesan cheese. 
Bake for
               28-30 minutes or until golden brown. Let stand
               10 minutes 
before serving.

Camp Lebanon Oatmeal

1 5/8 cups water (from the bottom of Cedar Lake)
1 cup oatmeal
1/8 teaspoon salt


Combine everything in a pot. Over medium heat bring to a boil. Reduce heat and simmer for 5 minutes, stirring often. Let sit in pan off het for 2-3 minutes.

Caramel Apple French Toast

4 cups French bread, cut in 1" cubes
2 large eggs
3/4 cups milk
1/2 teaspoon vanilla extract
1 granny Smith apple, skinned and sliced thin
4 ounces cream cheese, softened
6 tablespoons brown sugar
1/4 cup sugar
2 tablespoon milk
1/2 teaspoon vanilla extract
1/4 cup English toffee chips


Grease a 8x8 pan. Put bread cubes in a large bowl; combine eggs , 3/4 cups milk and 1/2 teaspoon vanilla, mix well, pour over bread cubes. Mix well add let soak in refrigerator for 2-3 hours. In the greased 8x8 pan place 1/2 of bread mixture, top with chopped apples. Combine the rest of the ingredients and pour over apples. Top with remaining bread mixture, cover and refrigerate overnight. Bake covered at 350 degrees, for 25 minutes, remove cover and bake another 15 minutes.



French Toast

1 egg
2 tablespoons butter, melted
3/4 cup milk
2 teaspoons vanilla extract
2 tablespoons sugar
2 tablespoons flour
1/4 teaspoon salt
8 slices of thick bread


Preheat oven to 400 degrees. Heat a skillet over medium heat for 5 minutes. In a shallow pan beat egg, whisk in remaining ingredients, except bread, until smooth. Soak bread without oversaturating, about 30 seconds aside, place on rack to allow excess batter to drip off. Melt 1 tablespoon of butter in pan, add bread and cook until golden brown. Move browned toast to a rack on a cookie sheet. When all slices are done bake in oven for 5 minutes. Serve with powdered sugar, fruit or syrup.








French Toast Bake

1/2 cup butter
1 cup brown sugar
1 loaf Texas Toast, crusts removed
4 each egg
1 1/2 cups milk
1 teaspoon vanilla
1/2 cup sugar
3/4 tablespoon cinnamon

In a small pan over medium heat, melt butter and
brown sugar to a boil. Pour into a greased 9x13 pan,
spread around.

In a bowl combine eggs, milk and vanilla; set aside.

Combine sugar and cinnamon. In the prepared pan
lay a single layer of toast; top with half of the egg
mixture and half of the cinnamon sugar; repeat.
Cover with foil and refrigerate overnight.

Preheat oven to 350 degrees. Bake covered for
30 minutes; remove foil and bake another 15 minutes.
Serve warm with powdered sugar and syrup



Frothy Breakfast Drink

1 can frozen orange juice concentrate, unthawed
1 cup water
1 cup milk
1/2 cup sugar
1 teaspoon vanilla
8 ice cubes


Combine all ingredients in blender, mix until thick and slushy.



Granola

1/4 cup oil
1 stick butter
1/2 cup brown sugar
1/2 cup honey
1 tablespoon molasses
1/2 tablespoon vanilla
1 pound rolled oats
1 cup grape nuts cereal
1/2 cup nuts, chopped
1/2 cup sweetened coconut flakes
1/2 cup ground flax seeds
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt


Preheat oven to 350 degrees. In a small saucepan over medium heat bring the first 5 ingredients to a boil. Remove fro heat and add vanilla, allow to cool slightly. Combine the rest of the ingredients in a large bowl; add syrup and mix well. Put granola on a parchment lined baking sheet. Bake for 25 minutes, stirring 3 or 4 times to evenly cook. Allow to cool then break up and store in an airtight container.

To make granola bars--for every 1 cup of granola; heat 1/4 cup corn syrup and 1 tablespoon butter to a boil; cook for 1 minute. Remove from heat and add 1 tablespoon peanut butter; stir until combined. Pour over granola and mix well. Put on wax paper and allow to cool. Store in an airtight container.

Pancakes

1 cup milk
2 tablespoon white vinegar
1 1/4 cups flour
2 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 tablespoon butter, melted


Heat a skillet over medium high heat. Add vinegar to milk
and let sit for 5 minutes. Combine flour, sugar, soda, powder
and salt, mix well. Add egg and butter to milk, mix lightly.
Add milk mixture to dry and mix until most of the lumps are gone,
DO NOT over mix. Lightly butter skillet pour out pancakes
with a 1/4 measuring cup.






Pannekoeken -Dutch Baby

3 eggs
1/8 teaspoon salt
3/4 cup skim milk (warmed for 20seconds in microwave)
3/4 cup flour
3 teaspoons sugar
2 teaspoons vanille
2 tablespoons butter



In a blender add all ingredients, except butter, blend until mixed well.
Allow to rest on counter for 30-60 minutes.


Place cast iron pan in oven and preheat oven to 450 degrees.
When preheated add butter to pan keep in oven 5 minutes.
Swirl butter around pan and pour in batter.
Bake for 15-20 minutes.


Sausage Bake


2 pounds sausage, browned and drained
1 box brownberry croutons, seasoned
2 cups cheddar cheese
4 egg
1 cup milk
1 teaspoon dry mustard
1 can cream of mushroom soup, condensed
1/2 cup milk


In a greased 9x13 pan pour croutons on bottom, top with cheese then browned sausage. Combine milk, eggs and mustard and pour over top. Cover and put in refridgerator over night. In morning combine soup and milk and pour over top. Bake at 325 degrees for 1 1/2 hours. Remove from oven and let stand for 15 minutes before serving.

Very Vanilla French Toast

               1 cup whole milk
               3 ounces Cook and Serve Vanilla pudding
               1 egg
               1/2 teaspoon ground cinnamon
               6 slices dried bread
               2 teaspoon butter


               In a large bowl, whisk milk, pudding mix, egg
               and cinnamon for 2 minutes until well blended.
               Dip bread in in pudding mixture on each side
               for 30 seconds.

               Heat skillet over medium heat; when heated add
               butter until melted, brown toast on both sides.

               When all the toast is done, put on a baking sheet
               and bake for for 5 minutes.




Waffles, light and crispy


                   3/4 cup flour
                   1/4 cup cornstarch
                   1/2 teaspoon salt
                   1/2 teaspoon baking powder
                   1/4 teaspoon baking soda
                   3/4 cup buttermilk
                   6 tablespoons vegetable oil
                   1/4 cup whole milk
                   1 egg, separated
                   1 tablespoon sugar
                   1/2 teaspoon vanilla

                   Preheat oven to 200 degrees.
                   In a bowl combine the 1st 5 ingredients.
                   In a measuring cup combine buttermilk,
                   oil, and egg yolk.  In a bowl beat egg white
                   to soft peaks.  Add sugar and vanilla beat
                   to stiff peaks.  Pour liquid into dry whisk
                   until blended, fold in egg white.

                   Pour 1 1/2 cups into a preheated waffle iron,
                   cook for 6-8 minutes.  Keep in oven until
                   all are cooked.
