Waffles, light and crispy


                   3/4 cup flour
                   1/4 cup cornstarch
                   1/2 teaspoon salt
                   1/2 teaspoon baking powder
                   1/4 teaspoon baking soda
                   3/4 cup buttermilk
                   6 tablespoons vegetable oil
                   1/4 cup whole milk
                   1 egg, separated
                   1 tablespoon sugar
                   1/2 teaspoon vanilla

                   Preheat oven to 200 degrees.
                   In a bowl combine the 1st 5 ingredients.
                   In a measuring cup combine buttermilk,
                   oil, and egg yolk.  In a bowl beat egg white
                   to soft peaks.  Add sugar and vanilla beat
                   to stiff peaks.  Pour liquid into dry whisk
                   until blended, fold in egg white.

                   Pour 1 1/2 cups into a preheated waffle iron,
                   cook for 6-8 minutes.  Keep in oven until
                   all are cooked.
