1 2/3 cup flour
1 cup sugar
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder
1/2 cup very hot water
1/2 cup vegetable oil
1 cup sour cream
2 eggs, lightly beaten
1 teaspoon vanilla
2 cups chocolate chips
Preheat oven to 375 degrees.
In a large mixing bowl whisk flour, sugar, soda
and salt. In a medium bowl add cocoa powder
and hot water, whisk until smooth. Add oil, sour
cream, eggs and vanilla to chocolate mixture, mix
well. Pour wet bowl into dry bowl, mix well with
a spatula. Fold in chocolate chips. Fill muffin tin
2/3 full. Bake for 17-18 minutes. Allow muffins
to cool for 15 minutes in pan before moving to a
cooling rack.
