Whoopie Pie with Ermine Filling

          1 Batch of Chocolate Chocolate Chip Muffins
          
          1 cup sugar
          5 tablespoons flour
          1/4 teaspoon salt
          1 cup milk
          1 cup butter, softened
          1 teaspoon vanilla

          Prepare muffins using a muffin top pan.

          For filling, in a sauce pan combine sugar
          flour and salt, whisk together and cook over
          medium heat for about a minute. Whisk in
          milk until smooth. Continue cooking, whisking
          constantly, until mixture is a pudding like
          consistency. Pour mixture into a glass container
          and cover with plastic wrap directly on the 
          surface to prevent a skin from forming. Cool
          to room temperature.
          
          In a bowl whip butter on high until light and fluffy.
          Reduce mixer to medium and add cooled mixture
          1 spoonful at a time, mix completely each time. Add
          vanilla and whip until smooth. 

          Place filling between 2 muffin tops.
