Vanilla Wafer Peanut Butter Cookie

                Peanut Butter Filling

           1 cup powdered sugar
           1/2 cup creamy peanut butter
           1 tablespoon butter; softened
           1 to 2 tablespoons heavy cream

               Chocolate Coating

           1 1/2 cup semi-sweet chocolate chips
           2 tablespoon vegetable shortening

          40 Vanilla Wafer Cookies

          For the filling combine all 4 ingredients and whip
          until combined. If too dry add a teaspoons of cream
          until creamy.

          Add roughly a teaspoon of filling between 2 cookies.
          Cover and refrigerate for 1 hour.

          For chocolate coating place chips and shortening in a
          bowl and microwave for 30 seconds and stir.  Repeat 
          until the smooth.

          Dip sandwich cookies in chocolate, cover completely.
          Place on a piece of wax paper. Store in refrigerator.
